Tailgate Sausage and Pepper Sandwich

Tailgate Sausage and Pepper Sandwich

These Tailgate Sausage & Peppers Sandwiches are built for game day, bringing together juicy grilled Italian sausage, smoky charred peppers and onions, and gooey melted provolone. A generous hit of Kosmos Q Dirty Bird Rub adds that signature BBQ kick, while buttery toasted hoagie rolls hold everything together. Whether you're firing up the grill for kickoff or feeding a hungry backyard crowd, these sandwiches are guaranteed to be a crowd-pleaser.

You Will Need

For the Sausage & Peppers:

• 4 Italian sausage links
• 2 bell peppers, sliced
• 1 large yellow onion, sliced
• 1–2 tbsp Kosmos Q Dirty Bird Rub
• 1 tbsp olive oil
• 4 hoagie rolls
• 8 slices provolone cheese
• 2 tbsp butter, melted
• Optional: marinara sauce or spicy mustard for serving

The Prep

Preheat your grill to medium-high heat, around 375–400°F.

Slice the bell peppers and yellow onion, then toss them with the olive oil and Kosmos Q Dirty Bird Rub until evenly coated.

Melt the butter and set it aside for brushing the hoagie rolls. Have your provolone cheese and any optional sauces ready so you can assemble the sandwiches as soon as everything comes off the grill.

The Cook

Place the Italian sausage links on the grill and cook for 15–20 minutes, turning occasionally until they're nicely browned and reach an internal temperature of 160°F.

While the sausages cook, place the seasoned peppers and onions on a griddle or in a grill-safe pan. Cook for 10–12 minutes, stirring occasionally, until softened and lightly charred.

Once the sausages are cooked through, slice them into bite-sized pieces and toss them with the grilled peppers and onions. If you want an extra punch of flavor, add another light sprinkle of Kosmos Q Dirty Bird Rub.

Brush the hoagie rolls with melted butter and toast them on the grill until lightly golden.

Load each toasted roll with the sausage, peppers, and onions. Top each sandwich with 2 slices of provolone cheese, then place the assembled sandwiches over indirect heat for 1–2 minutes, just until the cheese melts.

The Payoff

These sandwiches bring serious tailgate flavor with every bite. You've got juicy Italian sausage, sweet peppers and onions with a little char, melty provolone, and that signature Dirty Bird kick, all tucked into a buttery toasted hoagie roll.

Serve them hot with marinara for a classic sausage-and-peppers vibe or spicy mustard for an extra tangy finish. They're perfect for game day, backyard cookouts, or any time you want an easy grilled meal that feeds a hungry crowd.

Fire up the grill, crack open the game-day snacks, and get ready for kickoff. These sandwiches are a guaranteed win!
