You Will Need

  • 2 lbs (3-4) boneless skinless chicken breasts
  • 2 cans (10.75 oz each) condensed Cream of Chicken & Herb soup
  • 1/3 cup of Sour Cream
  • 1 box (6-ounce) Stove Top Chicken Stuffing mix
  • 1½ cups unsalted (or reduced sodium) Chicken Broth
  • 1 can (14.5 oz) Mixed Vegetables
  • 2 tsp Kosmo's Q SPG rub
  • 2 tsp Kosmo's Q Dirty Bird rub

The Prep

To start, fire up your smoker and set it to 300°F (149ºC). While the smoker preheats, grab those boneless skinless chicken breasts and season them to perfection with both SPG and Dirty Bird rubs, ensuring every piece is well coated in the flavorful blend of spices.

Place the seasoned chicken breasts on a chicken rack and let them smoke until their internal temperature reaches 165°F (74ºC), ensuring they are cooked through and juicy. Once done, let it rest for about 15 minutes, covered with foil. This resting period allows the juices to redistribute within the meat, ensuring a tender and moist result.

The Cook

Now, let's turn these smoked chicken breasts into a mouthwatering casserole. First, crank the temp up to 375°F (190ºC). While the smoker reaches the desired temperature, grab a 9×13-inch baking dish and spray it with non-stick spray for easy cleanup. Take the smoked chicken breasts and cut them into one-inch pieces. Alternatively, you can shred the chicken if you prefer a different texture.

Set the chicken aside as we prepare the flavorful sauce. In a medium bowl, whisk together the condensed Cream of Chicken & Herb soup, sour cream, mixed vegetables, 1 tsp of SPG, and 1 tsp of Dirty Bird. The combination of these ingredients creates a creamy and savory mixture that will coat the chicken with a delightful blend of flavors.

Once the sauce is well mixed, add the smoked chicken into the bowl and stir everything together. The creamy sauce should coat each piece of chicken, enveloping them in a luscious and aromatic embrace. Pour the chicken and sauce mixture into the prepared baking dish, ensuring it's evenly distributed.

Now, let's add the finishing touch: the stuffing! In another medium bowl, pour the dry Stove Top Chicken Stuffing mix and add the chicken broth over it. Stir the mixture until the stuffing is well-moistened. Spread the stuffing evenly over the chicken mixture in the baking dish.

The Payoff

The moment of truth has arrived! Place the baking dish in the preheated smoker and let it cook for about 40 to 45 minutes, or until the casserole is bubbling on the sides, and the stuffing is perfectly golden and crisp.

Once the Smoked Chicken and Stuffing Casserole is ready, remove it from the smoker and let it stand for 10 minutes before serving. This short resting period allows the flavors to meld together, ensuring each bite is bursting with taste.

The only thing that's left to do is serve and enjoy!
