Breakfast, lunch and dinner, this reverse seared t-bone steak can do it all. A quick and easy recipe for when you just want a good ol' backyard steak on your plate ASAP.
When we sent out the Mystery Boxes, we asked our people to send us recipes using their new Best Rubs. This submission was from Phillip Hill - thank you Phillip!
As with every recipe, we begin by cleaning up the steak. Even if yours came pre-trimmed, it's worth inspecting it for any chunks of hard fat or loose meat that the butcher might have left on. Especially with the t-bone (and all other bone-in cuts of meat), make sure there are no loose bone fragments near to where the bone has been cut.
Once that's out of the way, simply reason your t-bone with The Best rub and Prime Steak rub - one coat each.
Let the steak sit at room temp, while you're setting up the cooker. This will give the meat time to "sweat through' the rub, making it adhere better.
Cook the t-bone at 225ºF / 107ºC, flipping it over every couple of minutes to ensure even cooking. Once it hits an internal temperature of 115ºF / 46ºC, remove the steak from the grill.
Bring the steak inside, and place it on a cutting board or plate. Add a small cube of butter (to taste) on top, and tent it lightly with aluminum foil.
At the same time, crank up the heat on the grill to 500ºF / 260ºC. Once hot enough, throw the steak over direct heat. Sear each side for 2-3 minutes, or to your desired doneness.
Don't forget to rest your steak for at least 5 minutes after cooking! This will allow it to reabsorb some of its juices.
And that's all there is to it! Serve the reverse seared t-bone alongside your favorite side, slice and put it in a sandwich, or eat it right off the grill! The possibilities are endless.
Once again, big thanks to Phillip Hill for this recipe. If you try it, or if you have a recipe idea you want to share with us, message any of our profiles across social media.
Catch you on the next recipe!
